Ability to process a clearaccept payment with the bare minimum

Clearaccept: At the moment the system requires email addresses and items to be itemised to take payments. Sometimes we are processing simple transactions or customers are simply adding to an order over the phone, we also have a few customers who don't use email so wouldnt be able to provide one. It would be better if there was an option to only enter in the bare minimum like Name, address and total cost and process the payment without an actual order being created in EKM.
