"Display Out Of Stock Products" - Overide
Whilst option across the board to "Display Out Of Stock Products" is Enabled. And also a Message can be displayed.
Very useful would be to "overide" individual products at a "variable" level, so that ( eg waiting for a supplier to get them in). The not-in-stock product variants can be Hidden for a short period, until supplies come in. But the Overall Product is still shown.
Presently one has to delete the variable then add it back in to achieve the same result. Ideally granularity at Product variants should be hidden, not just whole product.

But could be considered whilst looking at other similar functions.

DougWhilst in Settings>StockControl there is a option to uncheck ( shown in https://support.ekm.com/support/solutions/articles/44001629717 )
to uncheck "Display Out Of Stock Products" that provides a hidden set of option for "Variant Stock", this is a only a one-solution fits all approach.
In Summary Suggestion is a greater granular at the individual porduct varient level ( posibly coudl be set at the individual attribute level of a product - visible or not ( defaulted to visible)
eg, Size ExSmall, in a Specific Hat is Hidden for "extended" eg 3months until restocked, but Generally through out the rest of the Store, for the Majority of products when they are out of stock items are still shown ( as regularly) restocked.
