Make processing and pending easier to tell apart

Make the pending a different colour or have as PE or PR to make it easier to tell the status without having to go into the order.

Or if just need a single letter how about 'N' for new instead of pending.

You can change the colour in Settings> Advanced Settings (left column)> Order Statuses, then edit the one you want to change. Having PE or N for pending orders would make more sense.
Changing the order and default, especially updating in bulk, would be good to avoid selecting "refunded" (the default for bulk changes) and emailing the customers, then having to email them all again to apologise for the mistake. (I've just done that!)
